We are going to go on a little road trip for today’s recipe. A recipe that is my take on a recipe from the Mediterranian coast of Spain.
Garlic Shrimp tapas that is to die for!!!
There is a little Spanish restaurant in NOLA that has some of the best tapas I have ever tasted. Actually, they make the best everything there. Their garlic shrimp is incredible. They also make a garlic chicken. Same recipe, just a little more clucky. The restaurant I am talking to is Lolas. It is a little hole in the wall on Esplanade Avenue, close to City Park. If you ever get to New Orleans, I highly recommend spending an evening there. I have been trying to pry the recipe out of them every time we eat there, but they have yet to give it up.
Since Lolas won’t give me the recipe, I have had to try to recreate their recipe forever. It has been hit or miss. It has always seemed to be missing something. Time after time, I have been close. So close. It was only after a suggestion from my lovely wife Amy that I got it. It is as close to Lola’s as I will ever get.
I recommend fresh shrimp and thyme, but I understand that not everybody lives where that’s possible. I have used frozen shrimp and dried thyme. Remember, you can use chicken instead of shrimp as well.
Here’s a little tip. Any recipe will turn out great if you follow the instructions closely and cook with love.
Garlic shrimp Tapas
Ingredients
- 1/3 cup olive oil
- 1/2 lb peeled and deveined shrimp
- 2 thin slices fresh lemon
- zest of 1 lemon
- 1 tbs paprika
- 1 tsp fresh thyme (1/2 to 3/4 tsp dried)
- 1/8 tsp cayenne or 1 or 2 dried whole peppers
- salt and pepper to taste
Instructions
- In a heavy skillet heat olive oil.
- Saute garlic and lemon zest until slightly browned.
- Add lemon slices.
- Saute shrimp until slightly pink.
- add paprika, thyme, and cayenne and continue sauteing for 3 minutes.
- Salt and pepper to taste.
- Serve with hot french bread for dipping.
