In the mean time. Are you looking for an easy dinner that is both quick and delicious? Well, I have one for you today. Jerk chicken is one of my favorite dishes. The intense flavors of the Caribbean really make my mouth happy, but it takes so long to prepare. The traditional Jerk marinade is made to marinate your chicken for 24 to 48 hours and throw it on a grill, but this one is crazy fast. I do lots of variations of grilling when my other half is off at work working leaving me to fend for myself.
You simply use the jerk seasoning blend from Smidge’s spice blends. Add the Jerk blend to some oil. My favorite for grilling is a canola blend, but I add a little coconut oil for the flavor. Just use enough oil and seasoning blend to make a slightly thick paste, then brush this on both sides of your chicken. Salt and pepper, then let sit to marinate.
Heat your grill to medium high. Grill your chicken, I cook mine about 2-3 minutes per side when using the thin cut chicken breast. You can use any cut of chicken you like, I just prefer white meat chicken.
Once your chicken is done place it on a plate and allow it to rest for at least 1 minute. I also sprinkle a little bit more of the seasoning on the chicken. Enjoy!!
I pair this with sweet potatoes (recipe coming soon I promise) and a green veggie or a salad. When I am feeling really lazy I eat the chicken in a whole wheat tortilla with cheese, sour cream, and lettuce.
