Hey Smidgers!
Today I’m going to be continuing the summer healthy eating theme that’s been ongoing here on Smidge. If I’m not talking tiny, I’m trying to tempt you into eating better. At least until fall, then all bets are off when it comes to eating. We do like to eat over the holidays down here in south Louisiana. But I digress.
Today’s recipe is a staple at the Smidge household. Garlic lemon thyme fish! I know it’s a mouthful, but trust me you’ll love it. The lovely Amy and I are big seafood fans and eat this pretty regularly. It is an easy dish that we can throw together quickly when neither of us really feel like cooking. I will throw this together while The Lovely Amy whips up some of her famous sweet potatoes and a salad and call it dinner.
The butter that it calls for is optional, but trust me, it really adds to the dish. And it’s really not a large amount, so it isn’t really that bad. Besides, what’s not to love about a butter sauce? A few more push ups or a few more minutes on the treadmill and all is forgiven, right?
In other news, the tiny house got insulated today! It is really starting to come together. We hope to have it complete and ready for a tiny house party in just a few weeks. Stay tuned for a complete update, I just wanted to give you a teaser. Don’t mind the weird watermark. Since I am still at work, The Lovely Amy took pictures for me. She watermarked the pictures because she will probably post an update on her blog as well.

Quick Easy Lemon Thyme Fish
Ingredients
- 2 fish filets. (About a half pound)
- 1 1/2 tsp fresh thyme. Lemon thyme if possible.
- 2 garlic cloves.
- zest of 1 lemon.
- Juice of 1 lemon.
- 1/4 cup seafood stock.
- 2 tsp. olive oil.
- Salt and pepper to taste.
- 1 tbs butter (optional)
Instructions
- Rinse and pat dry the fish fillets and salt and pepper both sides.
- Zest the lemon.
- Juice the lemon.
- mince the garlic and thyme together.
- Heat the oil over medium-high heat until it is shimmering.
- Add the fish filets and cook for approximately 3 minutes.
- Turn the fish when it releases from the pan.
- Add the garlic and thyme mixture and saute for a minute until the garlic gets slightly browned.
- Add the lemon zest and cook an additional minute.
- Deglaze the pan with the lemon juice.
- Add the seafood stock and simmer until reduced to about half.
- Remove from heat and add the butter, stirring gently to incorporate.
