Since we are still in our swimsuit season diet phase, I am going to show you a quick and easy side dish. This one can be done several ways. It can be sweet or savory. Spicy or mild. Either way, it will provide you with a healthy starch That will fill you up without all the guilt. I’m talking about the sweet potato. Sweet potatoes are considered a superfood, high in beta carotene and vitamins A, B and C. And, cooking them with a little fat like we do here increases your bodies ability to absorb them.
I absolutely love sweet potatoes. I will eat them almost any way you can cook them. The only problem is they take so long to cook. But I have found a better way smidgers. with a better way. Zip Lock Steam Bags!!! They will soon be your biggest little kitchen secret.
I simply chop up my sweet potatoes in even pieces and place them in the bag. There are directions on the front of the bag to tell you how long to cook whatever you are cooking right on the bag.
Like I said earlier, there are several variations that I like to cook. Pan fry up some onions and garlic before adding the sweet potatoes for sweet potato hash browns. Sweat a little fresh rosemary in some olive oil, then add your sweet potatoes. This gives you a savory Mediterranian treat. Or, add a little butter, brown sugar, and cinnamon for a sweet treat. Use your imagination. Change up your seasonings to give them a bit of added flavor. You could just use a little salt and pepper to let the flavor of the potato stand on its own. There are no rules here in smidge’s kitchen. Just a wonderfully quick way to have your favs and not spend lots of time doing them.
